Mochi Donuts with Chocolate Glaze
🍩 Mochi Donuts
Ingredients
- 
TTM-914001 Mochi Donut Mix – 1000g 
- 
Ice Water – 520g 
- 
Eggs – 200g 
- 
Shortening – 200g 
- 
Soybean Oil – 150g 
- Cocoa Powder
Recipe
Dough Preparation
- 
Add Mochi Donut Mix mixed with cocoa powder, ice water, shortening, eggs, and soybean oil to the mixing bowl. 
- 
Mix with a dough paddle: - 
Low speed: 1 minute 
- 
High speed: 3 minutes 
 
- 
Frying
- 
Preheat fryer to 180°C–185°C (355°F–365°F). 
- 
Use a Krinkle Plunger to shape and drop donuts into oil. 
- 
Fry for 3 minutes, flipping if needed, until golden brown. 
🍫 Chocolate Glazing
Ingredients
- 
Dark Chocolate Chips – 300g 
- 
Heavy Cream – 150g 
- 
Butter – 30g 
- 
Optional: Powdered Sugar – 50g (for sweetness) 
Recipe
Preparation
- 
In a bowl, combine chocolate chips and butter. 
- 
Heat cream to a simmer and pour over the chocolate mixture. 
- 
Let sit for 1–2 minutes, then stir until smooth. 
- 
Add powdered sugar and salt, mixing until glossy and fully incorporated. 
- 
Let cool slightly (2–3 minutes) before using. 
Decoration
- 
Once donuts have cooled, dip the top half into the chocolate glaze. 
- 
Let excess drip off. 
- 
Place on a rack to set. 
-
